Nobu Hotel, Santorini, Greece
Perched on volcanic cliffs near the village of Imerovigli, the highest part of the island, this first Nobu hotel for Greece offers spectacular views and a real feel of seclusion - although not in the hotel itself. Very attractively revamped from a previous luxury hotel, Nobu Santorini offers an infinity pool plus another sizable pool, an astounding restaurant serving the brand's signature Japanese/Peruvian cuisine, a bar, breakfast terrace and gym. The 25 guest rooms and suites are minimalist in style, with the bright whiteness and many curves you associate with the architecture of the Cyclades. Many have plunge pools or hot tubs.

Location
It may not have the best location for accessing the rest of the island, but this is countered by the wonderful feeling of seclusion and the breathtaking views.
Outside the village of Imerovigli, there's a walking trail outside the hotel that goes between Oia to Fira.
By plane: flights from London or Manchester to Thira take around 4 hours. It's a 15 minute drive from the airport. Free on-site parking. skyscanner.net
Style & Character
Mostly couples and groups of friends stay here, and Americans comprise about 65 percent of bookings. The predominantly white design throughout is ultra-minimalist and sleek.

Rooms
Rooms are in typical Cycladic style, white with lots of curves. Aozora has a big comfy bed, seating area, a huge smart TV and balcony overlooking the pools and the sea. The shower rooms are a sleek glossy white, too. Everything in the rooms is best quality and top notch, from the swanky Fellow kettle to the earthy rugs and original artworks.

Breakfast on the terrace is a lovely, relaxed affair. You can supplement the spread of pastries, cold cuts, salmon, cheese, fruit and yoghurt with eggs various ways or a full English breakfast. The rock shrimp tempura with creamy spicy sauce wass delicious, and we've never tasted fish like the black cod miso, packed with exotic flavours.
