We loved the rich, unctuous braised ox cheek, served with creamy smooth mash, greens and a glistening meaty jus. The salmon, which is cold smoked on the estate, over star anise, tea, peppercorns, juniper berries, fennel and citrus skins, makes a stunning starter.
